Apple Oatmeal Cake contributed by Sue

Apple Filling
6 Apples
2-3 Tbsp Lemon juice
1 3/4 Cup Rolled Oats
1 2/3 Cup Flour
1 stick of Butter
3/4 Cup of Sugar +1 Tbsp for topping
1 tsp Cinnamon

Directions:
-9” springform pan put parchment paper and lightly grease
-Mix flour, oats, cinnamon and sugar in a bowl
-Grate peeled apples and add lemon juice
-Grate 2 Tbsp of butter and put on the bottom of the pan, followed by 3-4 Tbsp of the oat mixture and lightly press down, next add 1/3 cup of the shredded apple mixture, then add more oat mixture, then apples continue alternating until used up
-Grate the remainder of the butter and add sprinkle it on top of the cake and finish with the sugar
-Bake in preheated 350 degree oven for about 40 mins. Yum!
