Bacon and Spinach Quiche contributed by Angelina
One thing that I really enjoy cooking is a good quiche. Below is a bacon and spinach quiche that I cook often. The great thing about quiche is that it’s simple and you can add almost anything to it (like only veggies instead of bacon) as long as you keep the main ingredients of pie crust, eggs, heavy cream, and cheese!
6 large eggs, beaten
1 1/2 cups heavy cream
Salt and pepper
2 cups chopped fresh baby spinach
1 lb. bacon, cooked and crumbled
1 1/2 cups Swiss shredded cheese
1 9 inch refrigerated pie crust
9 inch glass pie plate
Directions: Preheat the oven to 375 degrees F.
Combine the eggs, cream, salt, and pepper in a bowl and mix them together. Layer the spinach, bacon, and cheese in the bottom of the pie crust, then pour the egg mixture on top. Bake for 35 to 45 minutes until the egg mixture is set (golden brown on top). Let it cool down and enjoy!
