Banana Oat Bars contributed by Skylis

This recipe is forgiving and highly customizable to work with your taste preferences and what you have around. I usually make it with bananas, but I’ve had success with plenty of other fruits cooked into compotes and mashed. (Think pear sauce, apple sauce, blended canned peaches…)

2 small bananas, mashed
1 tsp ground flax seeds (optional)
2 c rolled oats
1/8 tsp salt
1/2 tsp turmeric
Cinnamon, ginger, cayenne, nutmeg, and/or cardamom, ground, to taste
1/3 c raisins or other dried fruit, chopped, or chocolate chips
1/3 c nuts, chopped, or seeds (optional)
3/4 c applesauce, unsweetened (optional)
1-1/2 tsp molasses, unsulphured (optional)

Preheat oven to 325F.
In a small bowl, mash bananas and add ground flax seeds. Let sit while you mix the rest of the ingredients.
In a large bowl, whisk together oats, salt, spices, dried fruit, and seeds/chopped nuts.
Add applesauce, molasses, and mashed bananas to dry ingredients. Stir to incorporate.
Grease a glass casserole dish (13”x9”) with your oil of choice. Pour bar mix into dish and spread evenly.
Bake in oven for approx. 40 minutes, or a bit longer if you want drier bars.
Let cool for 15 minutes and serve warm, or cut and store in an airtight container in the fridge.
