Pistachio Nut Cake contributed by Jen

Ingredients:
1 pkg yellow cake mix
1 pkg instant pistachio pudding
4 eggs
1/4 vegetable oil
1/2 pint sour cream
1 cup chopped walnuts
3 Tbsp cinnamon/sugar
green (or blue/yellow) food coloring (optional)

Directions:
-Preheat oven to 350 degrees
-Beat first five ingredients, (plus several drops food coloring) approximately four minutes
-Pour into ungreased tube pan
-In small bowl, mix together walnuts & cinnamon/sugar
-Sprinkle over cake
-Bake 35-40 minutes or until tester comes out clean.
