This Soda Bread is very quick and easy!

Set oven to 350 and add to a large roasting pan

3 1/2 cups of flour
-1/2 cup of sugar
-2 tablespoons caraway seeds
-2 tsp baking powder
-1 tsp salt
-1/2 tsp baking soda
-2 eggs
-2 cups (16 ounces) sour cream
-3/4 cup of raisins

Combine flour, sugar, caraway seeds, baking soda, salt and baking powder. Whisk eggs and sour cream together and stir into the flour mixture, then add raisins.

Place a piece of parchment paper on a baking sheet and form the dough into a 9” round shape and cut a crisscross over the top with a sharp knife.

Bake 350 for about 40 mins check by inserting a knife near the center it should come out dry when done, this makes a very moist bread great for toasting. Enjoy with a hot cup of tea!
